Hallelujah for leftovers! Seriously, sometimes after a long day, when you are starving and have no idea what to eat, is there any better feeling than seeing the container of leftovers from dinner the night before? I think not! That is exactly how I felt after returning home last night from a most successful Social Media Day celebration at LaSalle Grill where I was lucky enough to have won a door prize of South Bend Airport swag. Yay! Anyway, it was a terrific event which was very well organized and, from what I understand, somewhat on the fly which no one would have ever known. A super key note speaker and an engaging panel discussion were part of the event. However, despite the fabulous food provided by LaSalle Grill, I was still starving when I got home.
As I pensively cracked open the refrigerator door, I was happy as a pea in a pod to see that I had some of the chorizo, corn, and olive quesadilla filling from last night. After quickly preheating the oven and covering a baking sheet with foil (no mess to clean up later), I unloaded a half a bag of tortilla chips onto the sheet pan. I spooned over the spicy filling and loaded it up with cheese. After about 10 minutes in the oven, I was in late night snack food heaven. Oh, and BONUS....there was even some roasted tomato chipotle salsa and guacamole in there too! Sometimes it really is the little things that bring such joy!
It doesn't get much better than nachos fresh from the oven ... :)
