Soy and Red Wine Marinated Grilled Flank Steak, Mixed Summer Salad and Twice Baked Potatoes


Despite yet another round of severe thunderstorms which came roaring through earlier in the day, our weekly dinner at Nan's was not interrrupted, though there was ongoing concern that the flank-steak-on-the-grill would get rained out.  It was still a little soggy in the backyard, but the sun did make an appearance later in the day and we were able to fire up the grill.  Fortunate for us, as it was yet another delicious meal prepared by Nan who, by the way, seems to be assembling quite the fan base.  If you take a look at my CookEatShare page where I have many of my recipes and linked blog entries, you will find Nan's Easy Crock Pot Pulled Pork Sandwiches recipe to have about 124 views, which far out numbers the views of any of my recipes.  I guess with age comes expertise, right Nan? :)  Perhaps I'll add a "Nan's Recipes" page to this blog where we can feature some of her tasties too!  

Nan began to marinate the flank steak about 4 hours before we ate, which was plenty of time for the flavors to enhance the meat without overwhelming.  She combined red wine, soy sauce, Worcestershire sauce, brown sugar, crushed garlic cloves, chopped parsley and chopped green onion (I think that's all....don't worry, she'll tell me if I missed anything and I'll be sure to pass it along). After placing the flank steak in a big zip lock bag, she poured over the marinade and stored it in the fridge for about 4 hours.  When it was time to eat, we preheated the grill and dried the meat really well.  We cooked it over high heat for about 6 or 7 minutes per side (which sounds long, I know) for a perfect medium rare.  I find Nan's grill is not very hot at all, if your's is you may want to reduce the grilling time or it will be cooked more than you desired.  Just be sure to keep an eye on it.

She also made a simple salad of diced avocado, cantalope, tomatoes and sliced onion.  We dressed it with balsamic vinegar and a little olive oil and salt and pepper.  A really delicious combination of wonderful summer ingredients.
