Simple Beef Lo Mein


I call this dinner "Lo Mein" because I did actually use lo mein noodles, but besides that there really is not much that is actually authentically Asian, I'm sure.  Nonetheless, it was very tasty and quite healthy too, due to the use of the grill to cook the meat and vegetables.  It has been such a stormy Spring season and last night was so nice that I thought, why not cook outside, no messy oily splatters for me to clean up later. 

  
I started by grilling off the meat (a skirt steak, which I previously marinaded in some soy sauce for about 20 minutes) along with the yellow pepper and some lovely spring onions.   

Next, I cooked the lo mein noodles according to the package directions, which was for about 3 minutes, then drained and rinsed them under cold water. 

I made an Asian themed sauce including soy sauce, minced fresh ginger, minced fresh garlic, rice wine vinegar, toasted sesame oil, Asian chili garlic sauce, and just a touch of brown sugar.  I put the lo mein noodles in a large mixing bowl and topped with about half the sauce and tossed well.

After removing the meat and vegetables from the grill and giving them a few minutes to rest, I sliced them very thinly and added them to the bowl with the lo mein noodles.  I poured over the rest of the sauce along with some freshly chopped cilantro and tossed it all to combine.  So delicious!   Leftovers for lunch today was out of this world!

  3. Looks like a tasty version of the dish, Amy. Lo Mein is a staple in Guyana of all places where the only restaurants that exist are Chinese. Everyone there has a version of that dish (and stir fried rice which they make using the same ingredients).Our family uses those long green beans in them.
