ZOE'S 1st BIRTHDAY DINNER! Raspberry Chipotle Ribs with Twice Baked Potatoes

Yesterday, we celebrated my niece Zoe's 1st Birtday at Nan's house!  Here she is all dressed up in her beautiful party dress all ready for a day of exciting events.  After opening up all her presents, we stripped her down, covered the floor in plastic and she was treated to her first taste of a goodie,  her Mom's homemade cupcake.

 She certainly enjoyed it!

After all that fun, it was time for Zoe to take a nap and for the grown ups to enjoy another delicious Sunday night dinner at Nan's.  The week we enjoyed baby back ribs with a raspberry chipotle BBQ sauce, twice baked potatoes and a perfect crunchy, cold tossed salad.

Because it is one of our family favorites, twice baked potatoes are made frequently.  As a matter of fact, I just had them for dinner and you will find the recipe on my April 13, 2010 entry.

Nan's Raspberry Chipotle BBQ Sauce is based on a jarred sauce with the same name.  However, Nan added some soy sauce and apple cider vinegar to brighten the flavor and thin out the consistency.  Brush on the ribs during the final 20 minutes or so of cooking.
