Everybody needs a night off from cooking every so often, right? So I took one last night, but I still needed to eat and it still needed to be something good. I opted for one of my favorite foods from when I was a kid, a submarine sandwich. I added a few of my own touches with basil mayonnaise, yellow tomatoes and tossing the lettuce and red onion in an oil and vinegar before using it as a topping on my sandwich. The rest of the fixings included sliced smokehouse ham, fireglazed roasted turkey, genoa salami and baby swiss cheese.
Basil Mayonnaise
1/4 cup mayonnaise
1 small garlic clove, minced
zest of 1/2 lemon
juice of 1/2 lemon
1/4 cup finely chopped fresh basil leaves
salt
pepper
Combine all ingredients well and let stand, refrigerated for about 1 hour before using to let the flavors come together.
Damn, that looks great Amy! That is a true "bachelor night" feast for me. Of course, in New York we call these things heroes.

ReplyDeleteI love sandwiches and since writing the blog, I have not made them as much as I normally would. Growing up in Baltimore, we used to have a sub shop called Marie's who had the BEST subs. I think about them all the time.
Subs in mid/south east states, heros up north a bit, and grinders way up north!
